Artichoke Frittata

This is a recipe from Ginny







8 eggs
10 saltines, crumbled
3 bunches green onions, chopped
Salt, pepper
Dash Tabasco
1 clove garlic
½ bunch parsley, chopped
1 lb. cheddar cheese, grated
3-6oz jars marinated artichoke hearts, (chopped)  OR 1 can artichoke hearts
Dash Worcestershire sauce – to taste

Do ahead:        Chop onions and garlic
                        Chop parsley
                        Chop artichoke hearts
                        Grate cheese
                        Crumble crackers


Drain oil from artichoke hearts into large skillet – sauté onions and garlic until limp.
Meanwhile, beat eggs well with fork.
Add crumbled crackers to eggs – beat well.
Add chopped parsley, artichoke hearts, grated cheese, salt, pepper, Tobasco and Worcestershire sauce to eggs and beat well.
Add sautéed onions/garlic to eggs – stir well.
Sprinkle Parmesan or Romano on top.
Pour into oiled (Pammed) 8x12 pan or Pyrex baking dish. Bake at 400 degrees for 35-40 minutes – or until firm.


Serve  -  or  - cool. Cut into strips and wrap in foil and freeze. When ready to serve, put foil wrapped bars on cookie sheet in oven. When warmed, cut in squares and serve with toothpicks – or fingers.

八個蛋
十個蘇打餅乾
三把蔥
鹽,胡椒粉
Tabasco
大蒜一辦
半把parsley
一磅cheddar cheese
18盎司油漬artichoke hearts
Worcestershire sauce


切蔥蒜,parsley, artichoke hearts(先過濾多餘的油), 
cheddar cheese 刨絲
餅乾捏碎



蔥蒜炒軟


打蛋



加捏碎的餅乾


加parsley


加artichoke hearts


加 cheddar cheese


加鹽,胡椒粉, tabasco,worcestershire
加炒好的蔥和大蒜


8x12的烤盤先抹油再倒入拌好的料
最後灑Parmesan cheese



華氏400度烤35-40分鐘



Delicious!
