Taiwanese snack--- Pineapple bread
As a Taiwanese, this bread brings back good old memories. This is one of the snacks that I love. You didn't see it wrong, it's a snack for us. Most Taiwanese don't eat bread as part of a meal. Pineapple--- because of its looks, there is no pineapple at all.

If you read Mandarin, here is the recipe I used with a detailed video.
Outer dough
unsalted butter (room temperature) 5 1/3 Tbsp
sugar 6 Tbsp
cake flour 1 1/2 c (sift)
1 egg
vanilla extract 1/2 tsp
salt 1/8 tsp
beat room temperature butter till creamy
Add sugar and salt
beat until fluffy and butter leaves a point on the beater
scramble egg and divide into 4 parts, one part at a time
add vanilla extract
add flour in, 2-3 parts
form the dough in a roll and wrap with plastic, keep in the refrigerator for at least one hour
Inner dough
bread flour 1 3/4 c (sift)
cake flour 3 Tbsp (sift)
instant yeast 1/2 tsp
1 egg
milk 2/3 c
sugar 3 Tbsp
salt 1/4 tsp
unsalted butter (room temperature) 2 Tbsp
put all ingredients except butter and 1/8 c of milk in a mixing bowl, mix well

add remaining milk, a little bit at a time while mixing (2-3 times)
add butter
keep mixing

keep mixing until the dough can be stretched as thin as paper without breaking (about half hour). I can't imagine how long it will take to knead the dough using your hands as Carol's video shows. @@"
put dough in an oil coated bowl, spray dough with a little water, cover bowl with plastic wrap and set in a warm area (80-90 F) for one hour or until the dough doubles in size (I put the dough in the oven with a cup of hot water...I should have put a pot of hot water. A cup is not enough.)

put the dough on a floured surface (bread flour), sprinkle a little flour on the top
using your fingers to press and spread the dough (remove air bubbles)
cut dough in 8 pieces
form each piece in a ball and then place a damp towel on top of the dough balls
take out the outer dough from the refrigerator,
divide outer dough into 8 pieces on a cake floured surface
roll each outer dough into a round shape (4-5 inches)
while holding round outer dough in the palm of one hand, place inner ball dough on outer dough round and squeeze outer dough around inner dough
the dough will have a smooth top, use a dough cutter to cross cuts (about 1/8 inch deep) to look like a pineapple
and then brush lightly with egg (Carol's recipe doesn't have this step, so I didn't do it. Anyhow, I think it'll give a nicer color coating.)
cover top with sugar (I have sugar on the plate, and this is what the bottom looks like)
place dough on a cooking sheet in a warm place for 40 minutes (the dough has to rise the second time)
Ha! they rise. I should have had the outer dough thicker so they wouldn't have split...
baked in 350 F oven for 18-20 minutes
put the finished bread on a cooling rack

I also bought a porcelain turtle yesterday and its head and limbs can swing. ^_*
上禮拜就嘴饞已經做了,這次用Carol的recipe,不但麻煩,而且第二天外皮都軟了...我覺得是一個失敗
