Carrot cake

Carrot cake is very popular in the US, but I disliked it ever since Mick bought one ten years ago... it was Deadly sweet without any carrot taste. Anyhow, this is my first try. I modified the ingredients for the carrot cake. It turned out good and easy to make.



The dry ingredients:
2 cups all-purpose flour
1 cup sugar
2 teaspoons baking soda
1.5 teaspoons ground cinnamon
1 teaspoon salt

Combine and sift the dry ingredients

add 1 & 1/2 cups vegetable oil

4 eggs

1 jar (7 ounces) carrot baby food & 1 cup shredded carrot

mix on low speed until well blended

1 can (8 ounces) crushed pineapple, drained

1 cup chopped walnuts

stir in pineapple and nuts

pour into two greased and floured 9-in. round baking pans

bake at 350F for 35-40 minutes or until a toothpick inserted near the center comes out clean

cool for 10 minutes before removing from pans to wire racks to cool completely

Frosting

in a mixing bowl, beat 1 package softened (8 ounces) cream cheese

1/2 cup softened butter

until smooth

beat in 1 teaspoon vanilla extract &

1/2 cup confectioners'sugar

until mixture reaches spreading consistency

spread between layers and over top and sides of cake

Enjoy it.
