Taiwanese Cheese Cake


This cheese cake is a little complicated to make.
but it taste good.


4 eggs & 2 egg yolks
3/4 cup sugar
1 tsp vanilla extract
beat well until it becomes at least three times larger




add (sifted)
3/4 cup cake flour
1/4 tsp salt
mix evenly (don't use machine, I use a rice paddle.)



add 1/4 cup vegetable oil
mix evenly, the same, don't use machine 



bake at 350 F for 30 minutes

3 Tbsp corn starch (sifted)
2 egg yolks
4 Tbsp whipping cream



whisk these ingredients until combined

8 oz. cream cheese
2 Tbsp butter
1/4 tsp salt
2 Tbsp lemon juice
1 Tbsp lemon zest
2 Tbsp sugar




mix these ingredients well





combine 1 & 2

2 egg white
5 Tbsp sugar
1 tsp vanilla extract



beat these ingredients until stiff





combine with the mixtures 1 2



cover the bottom of cake pan with parchment paper



put in the already made cake



pour the batter in



place the cake pan in a cookie pan



add 3 cups of hot water in the cookie pan



bake at 325 F for 70-80 minutes



don't take the cake out until it is completely cooled in the cake pan on a cooling rack
