Korean Cooking~ 마파 두부(mapo tofu), Curry Beef


Red onion skin





Eun Hwa boiled red onion skin in water for half hour.


You can drink it or cook with it.
It's supposed to be good for your health. 



마파 두부(Mapo Tofu)
pork shoulder 150g



zucchini 150g


half red onion


mushroom 100g


shrimp 100g



finely chopped pork



1/4 red bell pepper


3 green onion


finely chopped garlic



mixed the garlic with pork


Sauce
1 Tb red pepper
고추장 (Gochujang)
Korean hot pepper paste 45g


soy sauce 30g


maple syrup 30g


Mix well
dump it in the pot with all the chopped ingredients




A pack of firm tofu



Sautee the tofu without oil over medium heat for ten minutes



add 1 1/4 cup red onion skin water
cover and cook over medium heat for 15 minutes 


diced potatoes





blend diced potatoes and 1/4 cup of red onion skin water
to thicken the sauce instead of using corn starch



Done!


Mapo Tofu is good to eat with rice.

Soak the brown rice in water
(just enough to cover the rice) over night.
The rice will start sprouting.
Eun Hwa said to cook brown rice this way is good for your health.


add 1/2 cup Quinoa 


add red onion skin water
cook for 40 minutes


All the details take a lot of time,
but Eun Hwa enjoys cooking a health meal for her family.
