Peaches from a neighbor's back yard, ours are still growing.
peeled peaches
diced peaches
filling (for two 9 inch pies)
4 cups of peaches
1 cup of sugar
2 Tbsp corn starch
dough
2 cups all purpose flour
1 tsp baking powder
a dash of salt
2/3 cup butter (room temperature)
mix well
then add 6 Tbsp cold water
rolled out pie dough
lined pie plate with dough
trimmed the edge
decorated pie edge
refrigerate for 10 minutes
pie topping
1 1/2 cup oatmeal
1/2 cup all purpose flour
1/2 cup sugar
mix well
then add 1/2 cup melted butter (microwave)
remove pie from the refrigerate, punch holes using fork
put filling in
top with oatmeal mixture
bake at 400F for 40 minutes
Set on cooling rack.
Enjoy.
