Happy Birthday (鳳梨酥)

妹妹打電話來要鳳梨酥的recipe,這是她第一次的嘗試




哇! She has talent! 
我把她傳給我綜合多個recipe的做法放這,等想吃時就來做,太欣賞這個妹妹了!


·        * 鳳梨罐頭2罐(pineapple chunks)、白糖150g、麥芽糖150g、奶油10-20、麵粉(或玉米粉)適量(可省)
  鳳梨稍捏碎,汁瀝乾
再將鳳梨絲先用大火炒至稍微乾熟,
再放入白糖, 此時會出水, 這時轉為中火, 再炒到湯汁稍微收乾時,
再放入麥芽糖用小火炒到湯汁收乾時, 扮入奶油,再灑上一些麵粉(最好過篩) ,灑麵粉的動作可能會有幾次,直到炒至成膏狀即可(如果炒得夠,粉類可少灑或根本不灑的)

*我覺得有點太甜,下次會試著減糖 *家裡沒有麥芽糖,用dark corn syrup代替,效果似乎一樣 *最後的粉我是加澄粉(蝦餃水晶餃的那種粉)

*酥皮材料: 奶油225g、酥油225g、糖粉100g、奶粉105g、蛋1個、低筋麵粉600g、起士粉25g
  將奶油和酥油混合後拌入糖粉
蛋分次加入 (1) 酥油裡
奶粉,起士粉,麵粉過篩加入 (2) 拌勻即成麵團
包入餡料以 190/190C 烘烤.10-15min翻面烤至熟即可。
*都是拌勻就好,不用打發 *喜歡或不喜歡cheese,可以隨意替換cheese粉和奶粉的量。例如cheese 50,奶粉80 或是cheese 0,奶粉130 *我的烤箱是第一面13,翻面再6 *我是取28g的皮,包20g的內餡 *烤箱拿出來後不用馬上脫膜,可也不要放太久,不然皮就不酥了。大約不燙手但還是熱的時候就可脫膜 *

一份酥皮約配兩份餡的量,大概40
皮和餡都放冰箱冰一下比較好操作
餡對我來說太甜,可減糖
