I am supposed to be on a diet.
Somehow, pineapple cake stuck in my head this morning, and I couldn’t get rid of it. Finally, I gave up. I was having fun in the kitchen today even though I don’t have the mold for pineapple cake. It really doesn’t matter about the shape if it tastes good. Don’t you think so?
The best pineapple cake I’ve ever eaten was from Charly, so I called him for the recipe. Here is how to make it.
1. Slice the pineapple into small strips.

As smart as I am, I decided to use the blender.

I can only follow Charly’s directions and slice BY hand.
Drained juice from pineapple.
(The weight went from 1032g. to 310g.
Ready to stir fry:
1. pineapple: 300 g.
2. butter: 4 Tbsp
3: sugar: ½ cup
4: maltose: ¼ cup
Finished stir frying, but I used only half of the butter and sugar.
Ingredients for dough
1. cake flour: 300g. (sift)
2. butter: 150g. (room temperature)
3. 2 eggs (room temperature)
4. fine sugar: 50g.
5. milk: 60g. (for best result, use powder milk 60g.)
6. a pinch of salt
PS. If you want the pastry to be like the store bought (more flaky,) use :
1. butter: 225g. (酥油白油各半) 有沒有人可以告訴我酥油的英文是什麼?
2. sugar: 70g.
3. powder milk 30g. milk 20g
4. 3 egg yolks
5. 奶精 60g.
Mixing butter and sugar
Added eggs and milk
Added flour and salt. Don’t overwork the dough.
Divided the dough into 30 pieces. Made pineapple filling.
(salty egg yolk is optional)
375F for 25 minutes. Done. (each pineapple cake: 108 Calories)
We need some good tea to go with it.

· * 鳳梨罐頭2罐(pineapple chunks)、白糖150g、麥芽糖150g、奶油10-20、麵粉(或玉米粉)適量(可省)
鳳梨稍捏碎,汁瀝乾
再將鳳梨絲先用大火炒至稍微乾熟,
再放入白糖, 此時會出水, 這時轉為中火, 再炒到湯汁稍微收乾時,
再放入麥芽糖用小火炒到湯汁收乾時, 扮入奶油,再灑上一些麵粉(最好過篩) ,灑麵粉的動作可能會有幾次,直到炒至成膏狀即可(如果炒得夠,粉類可少灑或根本不灑的)
*我覺得有點太甜,下次會試著減糖 *家裡沒有麥芽糖,用dark corn syrup代替,效果似乎一樣 *最後的粉我是加澄粉(蝦餃水晶餃的那種粉)
*酥皮材料: 奶油225g、酥油225g、糖粉100g、奶粉105g、蛋1個、低筋麵粉600g、起士粉25g
將奶油和酥油混合後拌入糖粉
蛋分次加入 (1) 酥油裡
奶粉,起士粉,麵粉過篩加入 (2) 拌勻即成麵團
包入餡料以 190/190度C 烘烤.10-15min翻面烤至熟即可。
*都是拌勻就好,不用打發 *喜歡或不喜歡cheese味,可以隨意替換cheese粉和奶粉的量。例如cheese 50,奶粉80 或是cheese 0,奶粉130 *我的烤箱是第一面13分,翻面再6分 *我是取28g的皮,包20g的內餡 *烤箱拿出來後不用馬上脫膜,可也不要放太久,不然皮就不酥了。大約不燙手但還是熱的時候就可脫膜 *
一份酥皮約配兩份餡的量,大概40個
皮和餡都放冰箱冰一下比較好操作

If there is any pineapple filling left, you can freeze it.
I used cake flour. There are probably one and a half pineapples in this recipe.

一下就看出來鳳梨酥的皮不一樣,我做的是台灣早期的配方
奶油較少,口感較Q
現在市面上賣的配方就比較酥
材料如下:
酥皮:
低筋麵粉300g
酥油115g
白油115g
細砂糖70g
蛋黃3個
牛奶20g
奶粉30g
奶精60g
鹽1/8小匙
餡:
除了上述鳳梨餡之外再加酥油40g, 鹽1/8小匙
(熱量應該很高,我沒算)

In recent years, more people started to like the "altered" traditional Taiwanese pineapple cake. The "enhanced" flavor seems to come from butter, milk powder, and/or artificial flavors. As a healthy eater/poor man, I would advise myself not to be hooked by its flavor for its high prices and high fat content.
